Buffalo Chicken Pizza

Hot wings? Good. Pizza? Good. Hot wing pizza? Oh. My. Lawd.

This is definitely my pants are super tight but I totally don’t care pizza.

I eat it.  Lots.

Plus, the first time Andy tried it, he kissed me…on the lips.  And he pretty much doesn’t get excited about anything I make, and could very easily survive on frozen corn dogs and Cup-O-Noodles.  Even the kids liked it, which is totally a welcome break from their usual menu of paper, dirt, and, well, each other.

Clearly.  This ranks in the Holy grail of dinner options.  Plus it’s super easy to whip up and goes with wine.  Which are my two most important cooking pre-requisites.

Buffalo Chicken Pizza

3 skinless, boneless chicken breast halves – shredded (Or, to save time, go get a rotisserie chicken from the store.)
2 tablespoons butter, melted
1/4 cup hot sauce (I used Franks Original, always the best!)
1 (8 ounce) bottle blue cheese salad dressing (I only added enough to cover the crust liberally.)
1 tube of ready made pizza crust- Pillsbury in the refrigerated section
1 (8 ounce) package shredded mozzarella cheese
1 (8 ounce) package shredded cheddar cheese

PREP: Preheat oven to 425 degrees.
Cook and shred chicken

1. Prepare crust per instructions, roll out on a foil lined cookie sheet. (Spritz the foil lightly with Pam so it doesn’t stick)

2.  Pre-cook crust for about 5-8 minutes until it’s less doughy looking.  When it starts to brown and firm up, remove from oven.

2. In a medium bowl combine the shredded chicken, melted butter and hot sauce. Mix well. Spread the blue cheese dressing evenly over the crust, then top with chicken mixture and sprinkle with shredded cheddar and mozzarella cheese (LOTS ZOMG CHEESE!).

3. Bake until crust is golden brown and cheese is bubbly, about 10 minutes. Let set a few minutes before slicing, and serve.

Dammit…I am totally making this again today.

Nobody tell Andy, or he will be so mad I spent all that money on all those Lean Cuisines.

Don’t like spicy? Try BBQ Chicken Pizza (Spread BBQ sauce on the crust, top with shredded chicken, sliced red onion and cheddar and mozzarella cheese).  Or, a Mexican Pizza (Cover the crust in refried beans, and top with seasoned ground beef or shredded chicken, corn, tomatoes, and cheddar cheese.  Top with lettuce, guacamole, sour cream and taco sauce before serving).

I could go on, but my thighs are already rubbing together.

I do love hot wings – especially the sauce – it is not the chicken I really care for! Isn’t that weird???

I LOVE the sauce too! I always add it to my eggs and even baked potatoes!

And great call on the red onions…actually, I am making this tonight (so wrong, I eat this entirely TOO MUCH!), so I am going to add the onions for sure!

ooooh, i make a very similar pizza but with Ken’s Steak House Buffalo Wing Sauce. never thought to put the blue cheese underneath everything… (usually i dribble it over the cooked pizza) gonna have to try it your way. Mmmmmm.

–>I made this again last night. I do 4 oz blue cheese and 4 oz ranch. Also, just before baking, I add in crumbled pieces of cooked bacon. ShaZam is this good!
